To prepare any of the above mentioned mixes add
two pounds of sugar with 1½ ounce of flavoring
concentrate (extract) and fill with water to
prepare one gallon. Always shake the flavoring
concentrate before using. Cold cups or freezies are
made by pouring this mix into 7 or 9 ounce cups and
freezing the cups.
For cream flavors add 6½ fluid ounces of
evaporated milk after the sugar and some water has
been added and then fill with water to prepare one
gallon. The 6½ ounces is one half the contents
of the popular 13 fluid ounce evaporated milk can.
Flavoring concentrate and some sugar water is mixed
before the evaporated milk is added to avoid direct
contact of the milk and flavoring concentrate. This
direct contact sometimes complicates the blending
process.
These frozen treats present a good method for
tasting the quality of the shaved ice flavors.
To prepare shaved-ice syrup, use six pounds of
sugar with four ounces of flavoring concentrate and
fill with hot water to prepare one gallon. The hot
water is to dissolve the sugar.
